Roast Chicken with Thyme & Garlic

Ingredients (serves 4)

  • 1 whole chicken (about 4 lbs)

  • 4 cloves garlic, smashed

  • 6 sprigs fresh thyme

  • 2 tbsp olive oil or softened butter

  • Flaky sea salt & freshly cracked pepper

  • 1 lemon, halved

Method

  1. Preheat oven to 425°F (220°C).

  2. Pat chicken dry. Rub with olive oil or butter, season generously with salt and pepper.

  3. Stuff cavity with garlic, thyme, and lemon halves.

  4. Roast on a rack in a roasting pan for 60–75 minutes, until juices run clear and skin is golden.

  5. Rest 10 minutes before carving.
