Roast Chicken with Thyme & Garlic

Ingredients (serves 4)
1 whole chicken (about 4 lbs)
4 cloves garlic, smashed
6 sprigs fresh thyme
2 tbsp olive oil or softened butter
Flaky sea salt & freshly cracked pepper
1 lemon, halved
Method
Preheat oven to 425°F (220°C).
Pat chicken dry. Rub with olive oil or butter, season generously with salt and pepper.
Stuff cavity with garlic, thyme, and lemon halves.
Roast on a rack in a roasting pan for 60–75 minutes, until juices run clear and skin is golden.
Rest 10 minutes before carving.
